    Bravo, madame. I now divide my time between here in the U.S. and France – where being overweight is not nearly as much of a problem as here. Yes, the French paradox.

    I, too, used to be overweight. And, always hungry. And, always dieting. And, exercising until I couldn’t move.

    Although I could always cook, and loved it … it was faux cooking. Or, rather, rigid cooking from recipes. Once I truly learned to cook – learning the fundamental skill sets – I could toss the recipes (or simply use them for inspiration) and begin truly cooking … as they do in France. Cooking with my Auntie Jacqueline, in her tiny Auvergnat kitchen (built in 1800), watching her technique and how she handles ingredients we bought that morning at the market, taught me how to think like a cook. Michael Ruhlman’s books, and actually cooking skills classes also made a huge difference.

    Today, my weight is stable, in a very healthy range for a woman who has 63 years, I’m never ‘starving’, I eat what I want – real food, whole foods (with a glass of truly good French wine!) in modest portions and push away satisfied. I walk, hike or ride my bike for exercise … and focus on having fun and living a full life rather than beating my body up striving to attain some bizarre ‘ideal’. And, I believe these changes have helped me survive Stage III cancer for 13 years now.

    As someone who swears by shopping for local produce and cooking without a recipe, I loved this piece. I think a lot of times people don’t quite realize how much of a difference eating real (rather than processed) food can make on our health and how we feel on a daily basis. What initially got you started on this way of shopping/ cooking?
